Description :
Cayenne is an annual or short-lived perennial depending on growing climate. Cayenne pepper plants like a lot of heat and humidity. It grows best in rich, well-drained soil. The plant has a single center stalk with many stems brancing off from that stalk. Elongated oval leaves come to a sharp point and are about 2 inches long. Small white, 6-petal flowers emerge from small buds and eventually mature into a tiny, green fruit. As the fruit grows and ripens, it changes from green to red. Cayenne has been used as folk medicine by Native Americans for centuries. It was used primarily for stopping bleeding, soothing stings and bites, and relieving arthritis pain. Internally, it was used to help both low and high blood pressure, to fight infections, and to help heal ulcers among a number of other things.
History and Folklore:
Chili is the Aztec name for Capsicum annuum (Cayenne). Burning large amounts of dried Cayenne peppers vaporizes enough oils to temporarily blind people exposed to the fumes/smoke. This is why it was a fairly common tactic used against Spanish Conquistadors by Incan and Mayan people defending their homes in the 16th Century.
Cultivation and Harvest:
Harvest the fruit (pepper) of the Cayenne plant in the summer when it is fully red and firm. Dry the pepper in the oven on its lowest setting (125° or so) for several hours. Cutting the pepper in half and placing them seed side up will speed the drying process.
Precautions:
Cayenne shouldn’t be taken in large amounts during pregnancy. People on blood-thinners should talk to their doctor before using cayenne.Do not use if pregnant or Nursing.

This was bought for my fist aid kit, and to replace the store bought spice. I am not sure of the age of the store bought spice. Another Pantry back up.
